When it comes to gastronomy, Stiemerheide – the 4* Superior hotel on the edge of the Hoge Kempen National Park in Genk – has been making waves for years, most notably with its Michelin-starred restaurant, De Kristalijn. This time, however, we crossed the street to follow the aromas and discovered that Restaurant Moonstone in Genk, awarded a Bib Gourmand and listed in Gault&Millau (13.5/20), is certainly no lesser contender. Here, you’ll find refined Belgian and French classics with a modern or Asian twist. In fact, we’re already planning our return!

Normally, we start our reviews with the aperitif, but this time we want to jump straight to the aftertaste. After enjoying the five-course Chef’s Signature Menu, we left Moonstone feeling perfectly satisfied – well-fed, but without that heavy or sluggish sensation that sometimes follows a generous meal. “I use very little salt in my dishes,” chef Sander Roos explained afterwards. “I try to limit each dish to just a few flavours and let the pure product shine. I often draw inspiration from techniques or tips I pick up from local cooks abroad, who naturally master their national dishes. This way, I create flavour bombs without relying on salt.”

As much as we loved the dinner, we weren’t impressed with the Cocktail Maison – a mix of dark rum, ginger, lime and yuzu. The drink was overly heavy on the rum, lacked refinement, and the ginger and lime were barely noticeable. Texturally, it felt like flat lemonade. The Maison Virgin, the non-alcoholic version with ginger, lime and yuzu, turned out to be a better idea.

‘Carrot, Ginger and Yuzu Praline’
Best enjoyed in one bite, this cocoa butter praline bursts open in your mouth, creating a playful gazpacho-like effect. The carrot emulsion is elevated by the tangy touch of a soy-based vinaigrette.

‘Pani Puri with Steak Tartare and Truffle’
Perfectly seasoned, with marinated beech and enoki mushrooms adding depth to the flavour profile.

‘Shortcrust Tartlet with Crab and Yuzu’
The yuzu brings a fresh, refined citrus note, beautifully complemented by a delicate lobster mayonnaise.

Served with North Sea grey shrimp, miso cream, and sesame radish.
Marinated Tuna
Served with North Sea grey shrimp, miso cream, and sesame radish. The sweet mayonnaise pairs intriguingly with the savoury miso, all tucked inside a delightfully crisp seaweed shell.

North Sea Crab Bisque
Served with prawn tartare, fregola (similar to pearl couscous), and a coconut espuma infused with kaffir lime leaves.
The bisque, prepared from fish carcasses, North Sea crab, and langoustine shells, has all the depth of a classic bisque, lifted by a refreshing hint of coconut. Accompanied by crisp potato puffs and airy aubergine reminiscent of prawn crackers.


Carrot Bisque with Plaice
Finished with cheese, belhops (a variety of basil), and basil oil. Visually striking, the oil swirls into the soup, creating an ever-changing, painterly effect on the plate. The bisque is seasoned to perfection – rich and complex, nothing like the bland carrot broth one might expect. It’s the kind of dish I might not have chosen from the menu, but after tasting it, I’d happily order it every time.

Served with confit potato, sweet onion, and aubergine.
Grilled Beef Entrecôte
Served with confit potato, sweet onion, and aubergine. Exactly as it should be. Tasty and just perfect in every detail.


Raspberry
Paired with beurre noisette, sherry vinegar, and white chocolate.
A refreshing dessert of ice cream topped with yoghurt hangop and mascarpone, finished with raspberry, sherry vinegar, and white chocolate – a beautiful balance of tart, sweet, and creamy.
