The ‘Les Gourmands’ collection stands out for its authentic yet simple symphony of flavors and textures. To preserve the true essence and taste of the Maison Dandoy biscuits, they are finely ground and then blended with chocolate to create a deliciously creamy filling. This delightful filling is then encased in a delicate layer of Neuhaus chocolate. For example, the Gourmand Salted Caramel consists only of crumbled biscuits mixed with chocolate, wrapped in a smooth layer of creamy milk chocolate—pure and simple. This simplicity results in an intensely pure experience, where the soft, refined chocolate meets the surprising crunch of traditional biscuits.
We grind our biscuits into a fine powder, which is then delivered to Neuhaus to be incorporated into the pralines. This allows us to use so-called ‘non-conforming’ biscuits in a flavorful and responsible way.
