On March 6, an icon of Belgian hospitality opens a new chapter in its culinary story. Nestled in the historic heart of Spa, Les Bains de Spa will host its very first Dîner Vigneron, an intimate celebration of fine wine, haute gastronomy, and the art of gracious living.

Conceived as a sensory journey rather than a simple dinner, the inaugural edition will welcome just 24 guests around the hotel’s iconic table, set within the soft, atmospheric glow of this architectural jewel. For this debut, the hotel invites one of the most compelling voices of Burgundy’s new generation: Armand Heitz. Based in Chassagne-Montrachet, Heitz represents a Burgundy in motion, deeply respectful of its historic climats, yet firmly oriented toward the future. His approach blends precision and elegance with agro-ecology, soil vitality, and a commitment to knowledge transmission. The result: wines that honor their origins while expressing a contemporary vision of viticulture.
Throughout the evening, Heitz will personally guide guests through his creations alongside the hotel’s sommelier, Valentin Cotton, illuminating the philosophy and craftsmanship behind each cuvée.
A Five-Course Gastronomic Immersion
Specially designed for the occasion, the five-course menu unfolds as a dialogue between land and sea, tradition and modernity, each dish meticulously paired with rare, limited-production wines sought after by leading tables and collectors worldwide.
The journey begins with refined amuses-bouches accompanied by Melon de Bourgogne 2023. A delicate carpaccio of scallops with mango, ginger, and white wine emulsion meets Beaune “Lulune” 2022, followed by vegetable ravioli with king crab heart and rémoulade, elevated by Meursault “La Barre” 2021.
The sea continues with meunière-style monkfish cheek, paired with chestnuts and Jerusalem artichoke cream, served alongside Beaune 2021. For the main course, slow-cooked venison fillet is enhanced by a powerful wine-and-chocolate jus, potato gratin, and seasonal vegetables, matched with Pommard 1er Cru “Refène” 2021.
Dessert offers a luminous pavlova of pear and verbena, accompanied by “Parcelle Interdite” 2022, an unexpected final note that promises surprise and delight.
